  • ½ cup fresh lemon juice

  • ¼ cup all-purpose flour

  • 1 cup fresh or frozen blueberries (if using frozen, do not thaw)

  • Fresh blueberries and lemon slices


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish or line with parchment paper.

  2. Prepare the crust: In a medium bowl, mix melted butter, flour, powdered sugar, and salt until a soft dough forms. Press it evenly into the bottom of the prepared pan.

  3. Bake the crust for 18–20 minutes or until lightly golden. Remove and let it cool slightly.

  4. Make the filling: In a large bowl, whisk together the eggs, sugar, lemon zest, and lemon juice until well combined. Add the flour and mix until smooth.

  5. Fold in the blueberries gently to avoid breaking them.

  6. Pour the filling over the warm crust and spread evenly.

  7. Bake for 25–30 minutes or until the center is set and the top is lightly golden.

  8. Cool completely, then refrigerate for at least 2 hours before slicing.

  9. Dust with powdered sugar and garnish with blueberries and lemon slices before serving, if desired.

Notes

  • Frozen blueberries work well too, just use them straight from the freezer.

  • For a firmer crust, chill it before pre-baking.

  • Want a less sweet version? Reduce sugar by ¼ cup in the filling.
