1 tablespoon baking powder
½ teaspoon salt
1 ½ cups (340g) unsalted butter, softened
2 ½ cups (500g) granulated sugar
6 large eggs, room temperature
1 tablespoon vanilla extract
1 ½ cups (360ml) whole milk, room temperature
For the Buttercream Frosting:
2 cups (450g) unsalted butter, softened
6 cups (750g) powdered sugar, sifted
2 teaspoons vanilla extract
4–6 tablespoons heavy cream or milk
Pink food coloring (gel preferred)
For Decoration:
1 Barbie doll (cleaned and wrapped in plastic wrap from waist down)
Sprinkles, edible glitter, and piping tips for extra designs
Instructions
Step 1: Prepare the Cake
Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans and one oven-safe glass bowl (like a 2-quart Pyrex bowl) to create the skirt shape.
In a medium bowl, whisk together flour, baking powder, and salt.
In a large bowl, cream butter and sugar together until light and fluffy (about 3–5 minutes).
Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
Alternate adding the dry ingredients and milk to the butter mixture, starting and ending with dry ingredients. Mix until just combined.
Divide the batter evenly between the pans and the bowl. Bake for 25–30 minutes (pans) and 40–50 minutes (bowl) or until a toothpick comes out clean.
Let cakes cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
Step 2: Make the Frosting
Beat the butter until creamy.
Gradually add powdered sugar, 1 cup at a time, beating well after each addition.
Add vanilla and enough cream to achieve a smooth, spreadable consistency.
Tint the frosting with pink food coloring.
Step 3: Assemble the Cake
Trim the tops of the cake layers and bowl cake to level them.
Stack the round cakes with a layer of frosting between each.
Carve the stacked cakes slightly to form the dress shape, if needed.
Insert the Barbie doll into the center (you may need to cut a small hole).
Apply a thin crumb coat of frosting over the entire cake and chill for 30 minutes.
Step 4: Decorate
Frost the cake generously with the pink buttercream.
Use piping bags and different tips to create ruffles, rosettes, and other designs on the dress.
Add sprinkles and edible glitter for extra sparkle!
Notes
Substitutions: Swap vanilla extract for almond or strawberry extract for a fun twist!
Shortcuts: Use a high-quality box cake mix to save time.
Storage: Keep refrigerated if making ahead, but bring to room temperature before serving.
Variations: Try an ombre effect by using different shades of pink frosting.
Tip: If you don’t have a large glass bowl, use smaller layers and shape them carefully.
